I have a number of items in a room, and I want to set it so that if a player chooses one, then chooses another, the first is un-chosen so that he only has one at a time.

This is how I defined verb 'choosing': Choosing is an action applying to one visible thing. Understand "choose [something]" as choosing.

How can I set it to overrule previous choices?
