Status : Online | Someone mentioned on another thread that music is very important to atmosphere in games. That's true. And I'd like a thread specifically to discuss memorable soundtrack moments from games.
I'll even get this started, so grab your MP3 players and spill your secret playlists for us all. You know you've got 'em!
'Swan Lake' from Loom http://www.youtube.com/watch?v=7ZXRkfIVjsc Yes, derived from the classic, but I still can't resist. It's a lovely rendition, with a smooth tempo and lovely connection to the game.
The 'Gabriel Knight 2/3 theme' http://www.youtube.com/watch?v=jBKiAIYEwh4 It took me a while to get used to the GK3 theme - it was so different from the one from 2, the change of keys made it feel deliberately nostalgic. Looking back on it, I suppose that's very smooth; really emphasised the end of an era.
'Dragon' from The Longest Journey http://www.youtube.com/watch?v=BKwN1fmgkrI In fact, all four of the 'club' type songs from this game are more atmospheric, and I can't for the life of me figure out what this type of music is even -called- but if I owned a small bar in a student area, this is what I'd play.
'Stones' from the Ultima Series http://www.youtube.com/watch?v=k26rXxiRhc8 Okay, not technically adventure game, but still charming. It's a peaceful, atmospherically evocative piece which is perfect mood-setting.
Right, your turns!!

It's called "chillout". A lot of clubs play "lounge" type of music that is very similar to chillout.
That Syberia theme makes my eyes water. Perfection <3

A lot of the old Sierra games had great soundtracks, even if they were midi. http://queststudios.com/
The Dig had a great soundtrack. http://soundtracks.mixnmojo.com/ Many of the LucasArts games had good soundtracks, though most were more the "catchy tune type" than the monumental atmospheric type.
Faust had a very unusual soundtrack, unfortunately near impossible to find these days. 01-Shinju Gumi - Ghost World. 02-Mel Torme - Hit the Road to Dreamland. 03-Marvin Gaye - Nature Boy.mp3 04-Stan Getz - Nature Boy.mp3 05-Sarah Vaughn - Dreamsville. 06-Margaret Whiting - Why Do I Love You. 07-Lee Konitz - The Daffodil's Smile. 08-Gerry Mulligan - Feeling Good. 09-Hazy Osterwald Sextet - Kriminal Tango. 10-John Lee Hooker - Worried Life Blues. 11-Clyde McCoy - Sugar Blues. 12-Jorge Bolet (Franz Liszt) - Mephisto Waltz #1. 13-Presence - Far Far Away From My Heart. http://il.youtube.com/watch?v=-jHbEN0UKMg http://www.youtube.com/watch?v=UDRRhIhkkWY

Now I really want to play that game again... :'(
I might have to reload Ultima VIII instead, it's the only one I have left that I haven't played yet.
Currently playing: Dragon Age Origins, Darkness Within 2, The Witcher, Fallout 3

Status : Online | What a coincidence, I'm just going through my game music files:
Discworld Noir - Malaclypse's theme http://www.youtube.com/watch?v=abTctpGT5Lg Always reminds me of the dark and rainy atmosphere of the game.
Grim Fandango - Swanky Maximino http://www.youtube.com/watch?v=Pd7oo1biPBE GF has plenty of good tracks, but I feel this piece is often overlooked (though it has been played several times on Video Games Live, which is awesome).
Sam and Max Hit the Road - The Tale of Brave Sir Sam http://www.youtube.com/watch?v=zIkOJOOfsMo
Sam&Max, virtual reality and epic music seem to go hand in hand- Reality 2.0 - Lefty's 2.0 http://www.youtube.com/watch?v=5tw4XLJPfCY
5 Magical Amulets - Dwarfs Cave http://www.youtube.com/watch?v=upTxc1J-tCM
Runaway: A Twist of Fate - Cultural http://www.youtube.com/watch?v=aJ0PdsrOAJY Now there's a piece of music that enhances the gaming experience. You thought you were just exploring the zany asylum, and suddenly you ended up in Silent Hill.
@CrisGer - Here's a piece of Kyrandia music I like (though I've never played the games): http://www.youtube.com/watch?v=ZS-NINvcA7w
There is so much more, I can go on all day... Like the music from Journey to the Center of the Earth, or that one track from Blackwell Unbound...

Nature Boy And this one being my all time favourite. Wasn't it Nat King Cole btw?
Not that long ago I posted a link to the music from the Gallery in Uru Ages beyond Myst in another thread on here. It's so pretty I just have to post it again. Music from the Gallery

and the gallery theme from URU is lovely the lady who did that did some other music for URU and she has a wonderful voice. Tim wrote the music for that.

Quest for Glory V is one of the only game soundtracks I ever cared enough about to listen to: http://www.youtube.com/watch?v=i3eUJ27MQYs&feature=related
Listening to the music gives me chills - this is certainly one of my most favourite games of all time. I realize now that the music is a large reason for that - it's resonant and evocative.

A few more I'd like to add:
The Lapland episode from the Agon series has some very atmospheric music. I particularly like the flute/dulcimer section about half way though the clip.
http://www.agongame.com/files/Lapland_sound_trailer.mp3
Then there's the Broken Sword 1 intro, with a very cinematic feel to its music:
http://www.youtube.com/watch?v=Uudul4IRZTg
The Neverhood soundtrack, silly, bouncy, jazzy, swinging good fun:

A classic game with some outstanding music. It sounds even better when it is not limited by its old technology.
