One could assume and reason to a conclusion and still not believe the conclusion. You obviously believe in the authority of your assumptions and reasoning.
EDIT: The American Heritage Dictionary, Fourth Edition, defines "believe" as " To accept as true or real." I'd say that sums up your attitude toward evolution (and gravity).
