After you found out, the solution will be easy enough. I really don't think it's coincidence.

Is it because Sorbet is sweet and the Wizard isn't? ...because "sorbet" is a noun and "sordid" is an adjective? ...because "sordid" is an anagram for "odd sir" while "sorbet" just makes "strobe"? ...because "sordid" is latin and "sorbet" is french? ...because the numeric values if the letters in "Sordid' adds up to 69 whereas "Sorbet" adds up to 79?

Here's the solution. Take a look in the dictionary. I'm sure there are dictionaries which include a lot more words, but it comes close.
"Sordid" is the next word after "sorcerer", and before that you find "sorbet". I think this might be a way which inspired the developers to the evil guy's name. If you then keep in mind that "sordid" actually is meaningful and can be easily related to something "evil" this solution becomes even more clear. They probably thought, "Hey, let's look up in the dictionary! Cool, look at that! Sordid...yes, we call him Sordid...wow, aren't we some clever guys?"
Might have played out that way. Keep in mind that my dictionary is the Oxford Advanced Learning. It's quite a small one compared to the real thing, but I honestly can't think of many words with "sorb", "sorc" and "sord".

It' similar to Guybrush. And you all know by now how that name was created. Sometimes it is that easy.

i don't I seem to recall reading on the scummbar web site that guybrush got his name from the pen used to draw him. I'm not a graphics artist - so, I couldn't tell you what a guy brush is.... but, thats the way I remember it.

Guybrush got his name from the fact that in DPaint, the art software being used at the time, you saved palettes and other art particulars in files called "brushes", and the one for the guy who was the hero was called the "guybrush". "Threepwood" was decided by a company contest.
